2 tbsp olive oil
4 back bacon rashers, chopped
3 spring onions, chopped
4 plaice fillets, about 175g (6oz) each
freshly ground black pepper
60g (2oz) butter
juice of 1⁄2 large lemon
1 tbsp chopped parsley

3 Place the tin in the oven and bake the fish for 15 minutes, basting once or twice.
4 Transfer the cooked plaice to warmed serving plates. Drain the bacon and spring onions
from the tin, and set aside.
5 Heat the butter in a small saucepan until golden brown, add the lemon juice, bacon, and onions,
and stir in the parsley. Spoon over the plaice and serve at once.
