INGREDIENTS
350g (12oz) ripe strawberries, sliced
2 tbsp caster sugar
2 tbsp orange juice or orange-flavoured liqueur
300ml (10fl oz) double cream
125g (41⁄2oz) ready-baked meringue nests
METHOD
1 Put the strawberries in a bowl, sprinkle the sugar over, add the orange juice, then use a fork
to crush the mixture.
2 Whip the cream until stiff peaks begin to form. Crush the meringue nests into small pieces.
3 Stir the meringue into the whipped cream. Top with the berries and the juices, and stir
together. Serve immediately.
GOOD WITH Fresh raspberries and/or blueberries scattered over the top.
PREPARE AHEAD Steps 1 and 2 can be completed several hours in advance. Assemble the
pudding just before serving.
