Warm fruit compôte |
INGREDIENTS
30g (1oz) butter
6 prunes, chopped
6 dried apricots, chopped
2 large apples, peeled, cored, and chopped
1 firm pear, peeled, cored, and chopped
1 cinnamon stick
2 tsp sugar
2 tsp lemon juice
yogurt and honey, to serve
METHOD
1 Melt the butter in a heavy saucepan over a medium heat. Add the fruit and cinnamon stick.
Cook gently, stirring often, until the fruit has completely softened.
2 Stir in the sugar and heat for a further couple of minutes, or until the sugar has dissolved.
3 Remove the pan from the heat, sprinkle with lemon juice, and serve warm with a spoonful
of yogurt and a drizzle of honey.
PREPARE AHEAD The compôte can be made up to 3 days in advance, covered,
and refrigerated.
